Well I know I am fully responsible for that but I am just wondering if I am getting the hang of it. Smoking is done at low temperatures of between 60 and 90 degrees Celsius but the temperature in the EGG will drop when the convEGGtor is.
It will heat quickly and burn cleanly. The Egg creates a natural airflow that works much better than this thing. Allow the chicken to rest for 12-20 minutes.
The charcoal chimney starter is another way to light your Big Green Egg especially helpful if you already have one of these laying around from another BBQ pit. Proceed with igniting the tips of all three paper towels and lit them burn out in which you should be ready to grillsmoke on the Big Green Egg in no time. I like to use the Big Green Egg brand fire starters and I put one of those in the middle of the charcoal light it and keep the lid open for about 5 minutes.
Place chicken on the grill and smoke to an internal temperature of 165f appx. The Egg held the temp eggsactly at 350. Heat the EGG to a temperature of between 100 and 150 degrees Celsius.
Make sure you never use lighter fluid or quick light charcoal products - you dont want it. This helps me bring the temperature up slowly to the desired range of 200 to 275. Insert the convEggtor and get the Egg up to the desired temperature of 275-300 f.

Light your Big Green Egg with your wood selection. Grab your torch light it and place it at the end of the A-Maze-N smoker.
